Ingredients
- 1.5 lbs ground beef, 90/10
- 2 medium zucchini, diced into ยฝ-inch pieces
- 1 bell pepper, diced
- 3 cloves garlic, minced (or 1 tsp garlic powder)
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil (optional)
- ยฝ tsp black pepper
- ยฝ tsp cumin
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef. Break apart and cook until browned, about 7โ8 minutes. Drain excess fat.
- Push beef to one side. Add zucchini and bell pepper. Cook 4โ5 minutes until softened.
- Add garlic. Stir everything together and cook 1 minute.
- Add soy sauce, sesame oil, cumin, and black pepper. Toss to coat. Cook 2 more minutes.
- Taste and adjust seasoning. Remove from heat. Meal Prep Notes
- Store in airtight container up to 4 days .
- Reheat on stovetop with a splash of water, or microwave covered 2 minutes.
- Serve over brown rice or cauliflower rice โ not white rice if avoidable.
