Ingredients

  • 1.5 lbs ground beef, 90/10
  • 2 medium zucchini, diced into ยฝ-inch pieces
  • 1 bell pepper, diced
  • 3 cloves garlic, minced (or 1 tsp garlic powder)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil (optional)
  • ยฝ tsp black pepper
  • ยฝ tsp cumin
  • 1 tbsp olive oil

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground beef. Break apart and cook until browned, about 7โ€“8 minutes. Drain excess fat.
  • Push beef to one side. Add zucchini and bell pepper. Cook 4โ€“5 minutes until softened.
  • Add garlic. Stir everything together and cook 1 minute.
  • Add soy sauce, sesame oil, cumin, and black pepper. Toss to coat. Cook 2 more minutes.
  • Taste and adjust seasoning. Remove from heat. Meal Prep Notes

  • Reheat on stovetop with a splash of water, or microwave covered 2 minutes.
