Ingredients
- ΒΎ lb large shrimp, peeled and deveined (fresh or thawed from frozen)
- 1 bag (12 oz) frozen cauliflower rice
- 1Β½ tbsp unsalted butter
- 1 tbsp olive oil
- 3 cloves garlic, minced (or 1 tsp garlic powder)
- Β½ tsp smoked paprika
- Β½ tsp Cajun seasoning
- ΒΌ tsp black pepper
- ΒΌ tsp kosher salt
- Juice of Β½ lemon
- Fresh parsley or dried parsley for garnish
Instructions
- Pat shrimp completely dry. Toss with olive oil, smoked paprika, Cajun seasoning, salt, and pepper.
- Preheat Ninja Crispi to 400Β°F for 3 minutes.
- Air fry shrimp in a single layer at 400Β°F for 6β8 minutes, shaking basket at the 4-minute mark. Shrimp are done when pink, curled, and lightly crisped at the edges. Do not overcook.
- While shrimp cooks, heat butter in a skillet over medium heat. Add minced garlic (or garlic powder) and cook 60 seconds until fragrant. Add cauliflower rice straight from frozen. Stir-fry 5β6 minutes until tender and lightly browned. Season with salt and pepper.
- Plate cauliflower rice, top with shrimp. Squeeze lemon over shrimp and finish with parsley. Meal Prep Notes
- Shrimp is best cooked fresh or same-day β it loses texture quickly in the fridge. Cook to order when possible.
- If prepping ahead: store shrimp and cauliflower rice separately. Reheat shrimp in Ninja Crispi at 375Β°F for 3β4 minutes only β do not overheat.
